The selection of botanicals, including kelp, carline thistle, and blaeberries, all sourced from the local vicinity, were hand-picked by Kirsty and infused with a base spirit derived from the distillery’s own farm-grown potatoes. Her endeavor resulted in a delicately intertwined balance of smooth, creamy, and floral aromas, with a hint of a seaside character on the nose that won them a Gold Medal at the San Francisco International Spirits Competition.
